Ingredients

Scale

Crust

  • 2 cups Oreo crumbs
  • 1/4 cup unsalted butter, melted

Cheesecake Filling

  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 tbsp cocoa powder
  • 1 cup semi-sweet chocolate chips, melted
  • 1/2 cup white chocolate chips, melted
  • 1/2 cup milk chocolate chips, melted

Decoration

  • Whipped cream, for decoration
  • Chocolate shavings, for decoration
  • Fresh berries, for decoration

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan to ensure the cheesecake doesn’t stick and is easy to remove after baking.
  2. Make the Crust: In a mixing bowl, combine the Oreo crumbs and the melted butter. Stir until all crumbs are moistened. Press this mixture firmly into the bottom of the prepared springform pan to form an even crust layer. Bake for 10 minutes, then remove from oven and allow it to cool.
  3. Prepare Cheesecake Batter: Using an electric mixer, beat the softened cream cheese in a large bowl until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined. Add in the sour cream and vanilla extract, mixing thoroughly. Incorporate the eggs one at a time, beating well after each addition to ensure a smooth batter.
  4. Divide and Flavor Batter: Divide the cheesecake batter evenly into three separate bowls. Stir the melted semi-sweet chocolate into one, the melted white chocolate into the second, and the melted milk chocolate into the third bowl until each is fully combined and smooth.
  5. Layer the Cheesecake: Pour the three different chocolate batters alternately over the cooled crust in the springform pan. This will create distinct and beautiful layered sections of semi-sweet, white, and milk chocolate cheesecakes.
  6. Bake the Cheesecake: Place the springform pan in the preheated oven and bake for 60 to 70 minutes, or until the center is set but still slightly jiggly. Once baked, turn off the oven and leave the cheesecake inside with the oven door slightly open for 1 hour to cool gradually and prevent cracking.
  7. Chill: Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. This chilling step allows the cheesecake to firm up and flavors to meld beautifully.
  8. Decorate and Serve: Before serving, decorate the top of the cheesecake with whipped cream, chocolate shavings, and fresh berries of your choice for an elegant and inviting presentation.

Notes

  • Make sure the cream cheese is at room temperature to ensure a smooth batter without lumps.
  • Melt chocolates gently using a double boiler or microwave in short bursts to avoid burning.
  • To prevent cracks, avoid over-mixing the batter and cool the cheesecake gradually by leaving the oven door slightly open after baking.
  • Use a water bath if desired to further prevent cracking, but be careful to wrap the pan tightly to avoid water seeping in.
  • Allow cheesecake to chill overnight for best texture and flavor.
  • Fresh berries such as raspberries, strawberries, or blueberries work wonderfully for garnish.
