Instructions

  1. Sauté Aromatics: In a large stock pot, heat olive oil over medium heat. Add the diced onions, celery, and minced garlic, sautéing for 4-5 minutes until the onions become translucent and fragrant.
  2. Add Vegetables and Liquids: Add the diced potato, sliced carrots, corn, peas, chopped green beans, diced vine tomatoes, chicken broth, V-8 juice, kosher salt, and black pepper to the pot.
  3. Simmer: Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer uncovered for 30 minutes, allowing the vegetables to soften and flavors to meld together.
